Note: Despite being a more rounded roast, this coffee needs an additional 3-6 days of rest on top of your standard rest time before consuming. We highly recommend 3.5-4 weeks, closer to 4 for this particular coffee, of rest before first brew. 

Now, time for something entirely different - a plain jane natural process. What?? Yes, you read that right - a natural process, done well, naturally. Yes believe it or not for you Scott Rao purists and sometimes closed minded folks (we still love you and yes you still belong in this industry. we're glad you're here-truly), we can appreciate the big three in traditional coffee processing sometimes. This coffee was one of the first coffees we ever launched at Promethium and we brought it back with this year's harvest straight from Colombia. We did it because we love it. She's a blast of fruits, we really should have called it fruit basket (that's crazy foreshadowing). However it's getting rightfully dubbed berry blast because berries of all shades, shapes and acidity types shine through our cups everywhere in every way. I've learned in life sometimes the most innovative thing you can do is execute something traditional with an absolute precision, and that's exactly what the young leaders of ASOCANAFI have accomplished here - with a touch of our roasting work of course ;)

ASOCANAFI represents one of coffee's most inspiring comeback stories we've read into. It's a private association founded in 2011 by local Nasa We'sx residents in Tolima as both an agricultural cooperative and preservation movement. What connects this coffee to the group is this coffee was led by a dynamic group of young Nasa We'sx professionals who playfully call themselves "Yuppies"(short for Young Professional People) committed to reconnecting with their historic land while revitalizing their community's coffee heritage after decades of armed conflict that displaced many traditional practices + peoples. These emerging youthful leaders manage over one hundred seventy producer families across small two-to-four hectare plots that function as protected indigenous territories, with more than six thousand shade trees per hectare making them guardians of one of Colombia's largest nature reserves. This field blend of Castillo, Colombia, Caturra, Typica, and Bourbon varieties, all from the Yuppie farms, creates complexity that would be impossible with a single variety, each contributing different fruit characteristics that merge into a blasting symphony of berry impressions we're enjoying.

A bit more about the region:

The Planadas municipality of southern Tolima where ASOCANAFI operates sits in one of Colombia's most transformation regions - an area that has evolved from being affected by armed conflict to becoming a powerhouse of peace-building through coffee. Located at the foothills of the Nevado del Huila volcano, the fourth tallest mountain in Colombia, this region benefits from incredibly fertile volcanic soils, high altitudes reaching 2000 meters, and the unique microclimate created by glacier-fed watersheds. What makes Tolima particularly significant for coffee production is its position spanning the Magdalena River valley with slopes from both the eastern and central Andes cordilleras, creating diverse microclimates that allow for year-round harvesting cycles and exceptional cup quality. The region's commitment to organic farming and Fair Trade practices has made it a leader in sustainable coffee production, with indigenous communities like the Nasa We'sx serving as environmental stewards who prove that the highest quality coffee comes from respecting both the land and the people who cultivate it. This is exactly the kind of forward-thinking approach that defines the coffee of tomorrow.

We recommend resting our coffees 3 weeks minimum, around 20-45 days we see most coffees begin to open up to the best depictions of their beauty. 

Note: We roast weekly on Mondays, ship Wednesday-Friday and work with concierge for order updates on Saturday - please place orders no later than 11:59p Sunday for Thursday dispatch, all orders placed after this point will be fulfilled the following Thursday

Occasionally on release week's we'll take on an additional day roasting to help handle the volume, please keep an eye on your inbox for earlier than expected shipments of your orders
