The magic continues during a seven-day sealed fermentation process, where natural enzymes work to amplify the fruit-forward profile. After this transformation, the cherries rest on elevated drying beds, preserving their brilliant characteristics while ensuring a clean finish. This careful handling enhances the coffee's natural sweetness and lively acidity, resulting in remarkable balance.
