It is not news, even to the most foundational coffee enthusiast, that Colombia is the powerhouse of coffee production in Southern America. The small country holds a vice grip on competitions and post 90 cupping scores across the country as it holds an extremely high density of award winning farms. However, few farms hold accolades as high as Café Granja La Esperanza, or CGLE for short. It is incredibly fitting our inaugural reserve offering is grown and prepared by their masterful hands. And what a masterpiece it is.
A brief breakdown of their proprietary hybrid wash technique is in order: Like all coffees, it begins at harvest, however differentiation is immediately commenced from this point onward. Being a competition-grade crop, this Sudan Rume variety is harvested by the CGLE team by hand, and then sorted and Brix-measured by hand to ensure only cherries meeting a precise ripeness level advance to the next phase-fermentation. Fermentation begins with a three phase process, phase 01 is a fourteen hour aerobic fermentation. Phase 02 begins immediately after with the tanks getting sealed and oxygen being removed for eighteen hours where advanced fermentation and microbial activity spikes. After the duel stage fermentation is complete, the cherries undergo depulping and finish with phase 03, a twenty-four hour aerobic fermentation. To prepare the cherries for mechanical drying, the beans are washed after the triple phase fermentation is complete. In drying, the beans are dried mechanically for seventy-two to one hundred twenty six hours based on the day’s harvest. The mechanical drying ensures all of dried flavors from the coffee’s triple phase fermentation remain in the beans even through roasting. Finally the beans are allowed to temporarily rest and are then vacuumed sealed and dispatched to us for roasting.
An incredible process on an already incredible variety of coffee in the Sudan Rume variety. CGLE has become quite notorious in the competition world for the tasteful processing they place on well placed and grown crop with this Hybrid Wash Sudan Rume being one of their most sought after offerings.
In our cups we experience a wildly vibrant herbaceousness in true Sudan Rume fashion, rich bergamot, a screaming blueberry impression on both the nose and palate, and sweet floral perfume impressions, raspberry acidity and a light mango finish. Extremely complex and nuanced as you’ll see on the tasting guide. Stunning, truly. Goodness we love this coffee so much. I have a feeling you will too.

How we're brewing this
Brewer- We love to use and experiment with an array of flat bottom and conical brewers, v60 is our go-to Filter- One that fits your brewer nicely, We love to use sibarist fast cone filters Gooseneck kettle- We reccomend a temperature controlled kettle, we love the fellow EKG Stagg Scale and timer- To measure important variables, we love the TIMEMORE Basic 2.0 Water- Filtered water or remineralzed water, we love to use Third Wave Water and experiment with minerals like APAX

Total drawdown time around 2:15-2:45, some coffees are faster draining than others.
We recommend resting our coffees 2.5 weeks minimum, around 20-45 days we see most of coffees begin to open up to their best depictions of their beauty.
