A few years ago I had a coffee that truly opened my eyes to the mind boggling possibilities of our craft. Many of you can relate to this experience. For some of you it was your first panama gesha, or your first smell of a processed coffee, for a lot of you, myself included, it was this exact coffee. It hardly needs any introduction. The White Honey Gesha is one of the most sought after coffees on this planet. It only comes around once a year and often needs to be preorderd by us roasters and sourcing agents months-years in advance. For example, we ordered this coffee for this year's Colombia harvest back in early summer of 2024 before Promethium was even fully realized. I did this because I knew that above all else we needed to bring this coffee to more individuals at all costs. We finally received our allocation of this nanolot right after harvest wrapped up around April of this year pretty much straight off the branches. There's so much to say about this coffee, the mastery of Sebastian's efforts with it, and what it means to us personally: it's hard to put it into words. Here's my best try.
This coffee is everything. Truly. It's a stark ultravoilet beam of energy in our industry shining a light on what is possible in the coffee world of tomorrow. When I first experienced this coffee, like many of you did too, I immediately went on a mad hunt for any more I could find at any expense necessary - it is that euphoric. The moment you get within arms reach of this coffee it's floral aromas hit you like you just entered a Le Labo or Byredo perfumery, with those sweet gesha florals singing in the background as well. In the cup it's incredibly nuanced, and tastefully built. A light fermentation on top of Sebastian's specialty: high elevation gesha crop. It's the best of forward thinking processing meets historically good farming techniques perfected through decades of shared knowledge and passion. It comes together in a London-esque museum renaissance painting scene that sort of leaves you further interested and stunned the longer you linger on it. That's Promethium. How we're brewing this
Brewer- We love to use and experiment with an array of flat bottom and conical brewers, v60 is our go-to
Filter- One that fits your brewer nicely, We love to use sibarist fast cone filters
Gooseneck kettle- We reccomend a temperature controlled kettle, we love the fellow EKG Stagg
Scale and timer- To measure important variables, we love the TIMEMORE Basic 2.0
Water- Filtered water or remineralzed water, we love to use Third Wave Water and experiment with minerals like APAX
