Valentine's Day is so special and brings out the best in couples but also individuals. Arguably it's one of the quietest days in global history, but especially in Raleigh. Everyone rushes through the work day to later pack into restaurants and movie theaters. A few years ago I got married and every valentines day my wife obsesses over chocolate covered strawberries, a valentine's day staple. Well around that same time we got married, Black & White Coffee Roasters, our local contemporaries, released Chocolate Covered Strawberries, their holiday release for that year. It was a smash hit, one both my wife and I adored, as well as our local enthusiast community. The coffee lingered in my mind ever since - and I always believed there was a bit of margin for giving that coffee a kiss further of dimension - which we have, I believe, done here. The holiday is so special and it mandates an equally special coffee.
This is of course El Vergel Estate's beloved strawberry coferment that we've blended with a super complex natural Colombian we've been saving from a coffee farm local to El Vergel, for a nuanced take on Chocolate Covered Strawberries, roasted to Promethium's increasingly beloved roasting style.
This coffee has complexity - not so much from it being two lots in one, but the the individual lots themselves. El Vergel's strawberry co-ferment is one of the industry's most complex takes, while this natural Colombian bourbon is a floral complexity bomb we've been saving for a rainy day. The marriage is a beautiful one, just like mine to my wife - something I'm incredible humbled and blessed to say - I don't deserve her - nor do I deserve you as a patron, thank you + happy valentines day.

Water- Filtered water or remineralzed water, we love to use Third Wave Water and experiment with minerals like APAX
